ZUCCHINI STEW
GREEN ZUCCHINI (AS FEW AS 2 OR AS MANY AS 5, DEPENDING ON SIZE), (PEELED, DESEEDED AND CUT IN BIG CHUNKS
1 SMALL BUTTERNUT SQUASH (PEELED, SEEDS REMOVED, AND CUT IN BIG CHUNKS
1 VIDALIA OR SEVERAL SMALL GARDEN ONIONS (CHOPPED)
BUNCH OF ITALIAN PARSLEY (CHOPPED)
1 CAN DICED TOMATOES
1 large can or box chicken broth
2 MED POTATOES (DICED)
¼ CUP OLIVE OIL
½ TEASPOON RED PEPPER FLAKES
HUNGARIAN PAPRIKA
salt and pepper to taste
In large soup pot add olive oil, chopped onion and paprika..saute
Add remaining ingredients and cook over medium heat until potatoes are soft, about ½ hour. Great served with toasted bread rounds or white pizza
